Start by preparing the ingredients for the chicken Caesar sandwich.
Take 2 scoops of flour and spread it out on a plate for dredging the chicken.

Season the flour with cayenne, smoked paprika, garlic powder, onion powder, salt, and black pepper, mixing it well with a fork.
Trim the chicken breast and cut it in half to create cutlets, then flatten them slightly.
Season the chicken cutlets with salt to enhance the flavor.
Dredge the chicken in the seasoned flour, making sure to coat it well.
Dip the floured chicken into the scrambled eggs, ensuring all sides are covered.
Coat the chicken in panko crumbs, pressing them onto the surface for a good coating.
Let the coated chicken sit for at least 5 minutes to allow the breading to adhere properly.
Heat about an inch and a half of peanut oil in a stainless pan until hot.
Once the oil is ready, carefully place the coated chicken cutlets into the hot oil to fry until golden brown and crispy, about 4-5 minutes per side.
While the chicken is frying, prepare the fresh vegetables: slice the red onion, heirloom tomato, and avocado.
Toast the Brios sesame buns with mayonnaise until golden brown.
Assemble the sandwich by layering the fried chicken, fresh veggies, and store-bought Caesar dressing on the toasted buns.
Serve the sandwich immediately.
