In a bowl, combine the warm water, warm milk, sugar, yeast, and stir. Let it rest for 6-7 min until fluffy.

Sift flour into the bowl and add salt. Mix with a spatula and knead for about 5 min, add the olive oil and knead for another 5 min.

Cover the dough with a clean kitchen towel and let it rest for 60 min at room temperature until double in size.

Divide the dough into 4 equal pieces and roll each piece into a ball. Place the ball on parchment paper and cover it with a clean kitchen towel and let it rest for 20 min at room temp.

In a medium bowl, combine all the cheese.

Preheat the oven to 400F.

Roll each piece into a circle shape of about 9 inches. Arrange some of the cheese mixture in 2 rows and roll sides up over the cheese, forming a boat shape. Then stuff the khachapuri with the remaining cheese mixture.

Cover with a clean kitchen towel and let them rise for 20 min.

Brush with egg wash and sprinkle with sesame seeds.

Bake for 20 min. Remove from the oven, make a well in the center of the khachapuri and crack an egg inside.

Return to oven and bake for about 3 min.

Remove from the oven and serve with butter.
