How to Make Sweet Liliko'i (Passion Fruit) Bars

Whole wheat flour adds fiber and nutrients.
Cut the lilikoi in half and scoop out the contents.
Add it to a blender and blend on low speed for a few minutes to separate the seeds from the pulp and juice.
Strain the fruit through a mesh to extract the juice, stirring to encourage the juice to go through.
Measure out 1 cup of lilikoi juice and set aside.
In a large bowl, sift together flour, powdered sugar, and salt.
Add in melted butter and combine until crumbly.
Line a 9 by 13 inch baking pan with parchment paper and pour in the crumble mixture, patting it down with hands or a flat surface.
Bake in the oven at 350°F for 20 minutes until light golden brown.
In a large bowl, whisk together granulated sugar and flour.
Add in lilikoi juice and eggs, mixing until combined.
Pour the lilikoi mixture over the baked crust.
Bake for another 25 minutes until the sides are firm and the middle is slightly wobbly.
Let it cool for one hour, then chill in the fridge for two hours or more before cutting into squares.
