1 lb part-skim mozzarella cheese
100 g (about 3/4 cup) whole wheat flour
300 g (about 2 1/2 cups) all-purpose flour
25 g (about 5 tsp) baking powder
6 g (about 1 tsp) salt
1 (15 oz or 425 g) can tomato sauce
3 g (about 1/2 tsp) salt for sauce
1 tsp (about 1/4 g) dried oregano
2 tsp (about 1 g) dried basil
1/2 tsp (1 g) garlic powder
1 tsp (2 g) onion powder
1/2 tsp (about 1 g) black pepper
optional red pepper flakes
450 g (about 2 cups) ground turkey
6 g (1 tsp) salt for sausage
2 g (1/2 tbsp) rubbed sage
3 g (1 tsp) white pepper
1 1/2 g (1/2 tsp) fennel seeds
1 g (1/4 tsp) smoked paprika
1-2 cloves minced garlic

Wipe off any kitty prints from the workspace.

Shred a 1 lb block of part-skim mozzarella cheese.

Preheat the oven to 500° Fahrenheit (260° Celsius).

Combine 100 g (about 3/4 cup) whole wheat flour and 300 g (about 2 1/2 cups) all-purpose flour in a bowl.

Add 25 g (about 5 tsp) baking powder and 6 g (about 1 tsp) salt to the flour mixture and whisk to combine.

Add 100 g (about 3/4 cup) of shredded mozzarella to the flour mixture.

Add 450 g (about 2 cups) ground turkey to a bowl for sausage preparation.

Season the ground turkey with 6 g (1 tsp) salt, 2 g (1/2 tbsp) rubbed sage, 3 g (1 tsp) white pepper, 1 1/2 g (1/2 tsp) fennel seeds, 1 g (1/4 tsp) smoked paprika, and 1-2 cloves minced garlic. Mash together until combined.

Cook the sausage mixture in a pan over medium heat, flipping once color shows and juices form on top.

Break up the sausage as it cooks until fully cooked, then set aside.

Roll out the pizza dough using flour to prevent sticking, forming a thin crust and rolling up the edges to create a crust.

Transfer the rolled dough to a sheet lined with parchment paper.

Layer on the tomato sauce, then add shredded mozzarella cheese (70 g or a little more than 1/2 cup).

Add toppings such as turkey pepperoni (17 slices) or the cooked sausage for additional protein.

For a veggie pizza, add sliced green bell peppers, artichoke hearts, sundried tomatoes, and mushrooms on top of the sauce and cheese.

Bake the pizzas in the preheated oven for 10 to 12 minutes until the crust is golden and cooked through.

For freezing, place the assembled pizzas in individual gallon-size ziplock freezer bags after a couple of hours of hardening in the freezer.
