250g minced boneless chicken thighs
Cooking oil
2 tbsp oyster sauce (vegetarian)
1 tbsp dark soy
1 tbsp light soy
1 tbsp fish sauce
1 tsp brown sugar
1/2 cup chicken stock
Whole chillies (optional)
Big handful of thai(holy) basil
2 eggs

Shallow fry whole egg in oil till crispy (yolk should still be runny), and leave aside.

Remove most of oil and add chopped garlic and chillis into wok and fry until fragrant.

Add chicken to wok and cook on high heat until browned.

Add sauce mixture to wok and cook down till thickened and sticky.

Deglaze wok with chicken stock.

Reduce down till caramelized.

Add whole chillis and shredded basil.

Add further 1 tbsp dark soy sauce for colour and seasoning (leave out if enough seasoning).

Serve with rice (I'm using jasmine) and top with crispy sunny side egg.
