Preheat the oven to 350°F (175°C).
Prepare a springform pan by greasing it with butter and lining the bottom with parchment paper.
In a mixing bowl, combine ricotta cheese, cream cheese, and honey until smooth.
Add sugar, eggs, and vanilla extract; mix until fully incorporated.
Stir in lemon zest and orange zest for flavor.
In a separate bowl, mix graham cracker crumbs, melted butter, and a pinch of salt to form the crust.
Press the crust mixture into the bottom of the prepared pan evenly.
Pour the ricotta mixture over the crust, smoothing the top with a spatula.
Bake in the preheated oven for 50-60 minutes, until set and lightly golden on top.
Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours, preferably overnight.
Before serving, dust with powdered sugar and garnish with fresh fruit.
