Heat 1 to 2 tablespoons of olive oil in a pan.
Add 1 diced onion and sauté for a minute.
Add 200 grams of vermicelli noodles and stir well to coat with oil.
Leave the vermicelli to brown for a minute until multiple shades of golden brown.
Add 2 chicken stock cubes (or 2 vegetable stock cubes for vegetarian option) and mash into the vermicelli and onions.
Add 850 milliliters of hot water and stir everything well.
Add 1 teaspoon of ground cinnamon, salt, and pepper; stir again.
Add 200 grams of bulgur wheat and give it a quick stir.
Cover with a lid and leave to simmer for 6 to 7 minutes.
After 6 to 7 minutes, lift the lid and check; then put the lid back on and leave to rest for at least 5 minutes.
Fluff everything up with a fork to separate the grains.
