Stir in minced garlic and cook until fragrant, about 1 minute.
Add soaked beans, vegetable broth, bay leaves, and thyme; bring to a boil.
Reduce heat to low and simmer, covered, until beans are tender, about 1-1.5 hours.
Stir in tomato paste and lemon juice; cook for an additional 10 minutes.
Season with salt, black pepper, and red pepper flakes to taste.
Remove bay leaves before serving.
Garnish with chopped parsley.
