Prepare a smoked pouch with wood chips covered in foil, poked with holes, and place it on the hot side of the gas grill.
While the grill is preheating, prepare a salsa with charred tomatoes, red onions, jalapenos, and garlic on the grill mat.
Remove the salsa from the grill after preheating.
