Grilled Chicken Greek Salad

Cultural Context

Greek salad, or Horiatiki, is a staple of Greek cuisine, traditionally made with fresh vegetables and feta cheese. It reflects the Mediterranean diet's emphasis on fresh, local ingredients. The addition of grilled chicken makes it a hearty meal, popular among health-conscious diners. Today, variations exist worldwide, often incorporating different proteins or dressings, but the essence of the classic remains cherished.

1.5 cups Greek dressing
1-2 large cucumbers, sliced
1 quart grape or cherry tomatoes
1.25 cups pitted kalamata olives
1.25 cups crumbled feta cheese
7 to 7.5 cups chopped romaine lettuce

feta cheese

1

Start by gathering five quart size Wide Mouth Mason jars.

2

Prepare 1.5 cups of Greek dressing, adjusting the recipe to have enough for marinating the chicken and for all five salads.

3

Marinate the chicken breasts by poking them with a fork and pouring 0.5 cups of Greek dressing over them. Cover and refrigerate for at least 4 hours, preferably overnight.

4

Grill the marinated chicken until it is no longer pink inside, cooking time will depend on thickness.

5

Chop the grilled chicken into bite-sized pieces after cooking.

6

To assemble the salads, add 3 tablespoons of dressing to the bottom of each mason jar.

7

Layer in about 1 cup of sliced cucumbers on top of the dressing in each jar.

8

Add approximately 0.25 cups of grape or cherry tomatoes to each jar.

9

Next, add 0.25 cups of pitted kalamata olives to each jar.

10

Layer 0.25 cups of crumbled feta cheese on top of the olives in each jar.

11

Divide the chopped grilled chicken evenly among the five jars.

12

Finally, add about 1.5 cups of chopped romaine lettuce to each jar, filling it to the top.

13

Seal the jars with lids and store them in the fridge for up to 5-6 days.
