Ukrainian Vegan Perogi

Mix 2 cups of white flour, 1 cup of white wheat flour, and a little salt in a bowl.

Gradually add 1 cup of water and knead until you form a nice ball of dough.

Add 2 tablespoons of vegan melted butter and continue kneading until smooth.

Lightly spray a bowl with oil, place the dough in it, cover, and let it rise in a warm place.

Chop onions and caramelize them in a pan over low medium heat for about 45 minutes.

Boil unpeeled potatoes in water for 15 minutes until tender, then drain and mash them.

Add unsweetened almond milk, a couple cloves of garlic, and a little salt and pepper to the mashed potatoes.

Sauté sliced mushrooms in the same pan as the caramelized onions.

Roll out the dough to about an eighth of an inch thick using a can as a rolling pin.

Cut out circles using a glass, fill with either the potato mixture or the caramelized onion and mushroom mixture, and fold in half, pinching the edges to seal.

Boil the filled perogies until they rise to the surface, then remove with a slotted spoon.

Fry the boiled perogies in a pan for about 3-4 minutes on each side until golden brown.
