1

Start by making light checkerboard cuts in the surface of the chicken breasts. Make sure you don't cut too deep - just halfway through.

2

Season the chicken with salt and black pepper.

3

Heat olive oil in a frying pan over medium heat. Melt unsalted butter.

4

Coat the chicken breasts in flour on both sides, shaking off any excess flour.

5

Cook the chicken in the frying pan until nicely crisped and caramelized, about 4-5 minutes on each side. Transfer the chicken onto a plate.

6

Finely chop the garlic and sauté in the same frying pan for one minute or until fragrant.

7

Add chicken stock and bring to the boil, scraping all the juices that stick to the bottom.

8

Pour in heavy cream and mix well with a spatula, simmering over medium to low heat for 2-3 minutes.

9

Season with dried oregano, thyme, and red pepper flakes. Adjust salt and black pepper to taste.

10

Chop the sun-dried tomatoes and add to the sauce, stirring well.

11

Return the chicken to the pan and cook in the sauce for a further 4 minutes.

12

Add finely chopped basil leaves towards the end.
