Grind 5 grams of cardamom to a powder.
Combine 160 ml water and 200 grams sugar in a pot to make simple syrup; boil until aromatic.
Strain the syrup to remove cardamom solids.
Cool the syrup, then add 160 grams semolina and simmer on medium heat for 9-11 minutes, stirring constantly.
Prepare 400 grams of mozzarella cheese (without salt) and add it to the semolina mixture, cooking until melted and forming a moist dough.
Make the filling cream by boiling 500 grams of fresh cream, then adding a mixture of 45 grams corn flour dissolved in 100 ml water, whisking until it thickens into custard.
Prepare a syrup with 500 grams sugar, 250 ml water, and 2-3 slices of fruit; add lemon juice or tartaric acid and boil for 2 minutes.
Roll out the dough to 1.5-2 mm thickness, cut into squares, and fill with the Arabic cream and pistachios, then roll them up.
Serve the cheese rolls with syrup.
