Originating from Ukraine, pyrohy are a beloved traditional dish often filled with potatoes, cheese, or fruit. They hold a special place in Ukrainian culture, served at family gatherings and festive occasions. Today, variations can be found across Eastern Europe, with different fillings and cooking methods, making them a cherished comfort food worldwide.

Peel and boil potatoes, saving the water for later.
Mash the boiled potatoes.
Add sautéed onion, butter, and cheddar or cottage cheese to the mashed potatoes for filling.
In a mixing bowl, pour flour, add oil and salt, then mix.
Gradually add the saved potato water to the flour mixture to form dough, adjusting with more water or flour as needed.
Let the dough rest for 20 to 30 minutes.
Roll out the dough on a floured surface to about 1/8 inch thick.
Cut the dough into strips instead of circles for faster preparation.
Take a square of dough, place a teaspoon of filling in the center, and fold into a triangle, pinching to seal.
Boil the filled pyrohy in salted water for 3 to 4 minutes until they float to the top.
Serve with butter or oil to prevent sticking, and optionally with sour cream and bacon bits.
