Turkey Vegetable Soup

1 bunch celery
2 chopped onions
2-3 cloves garlic

Start by boiling water in a large soup pot.

Add the turkey carcass to the boiling water.

Add the tops and ends of the celery to the pot for flavor.

Chop up a couple of onions and add them to the pot.

Add 2-3 cloves of pressed garlic to the pot.

Season the broth with salt, pepper, and Italian seasonings.

Add 2 bay leaves to the broth.

Bring the soup pot to a high simmer, then reduce to medium-low simmer.

Cover the pot slightly ajar to allow steam to escape and simmer for 3-4 hours, checking periodically.

After 3-4 hours, strain the broth using a strainer basket and slotted spoon to remove bones and veggies.

In a separate pot, heat olive oil and sauté chopped celery and onion.

Add frozen crinkle cut carrots to the sautéed veggies.

Add a bag of frozen mixed veggies to the pot.

Add drained and rinsed organic kidney beans to the soup.
