Make Thai curry paste by grinding together Bird's Eye chillies, Dried Red Chillies, Shallots, Garlic, Galangal, Kaffir Lime Leaves, Lemongrass, and Coriander roots.

Add 2 heaped tbsp. of the curry paste to a cold pan.

Add chicken pieces to the pan along with some of the curry paste ingredients.

Add sweet peppers for color (optional).

Add Pea Aubergine and Pandan leaf (both optional).
