Take a look at the vegetable selection: 2 cups each of potatoes, eggplants, cauliflower, green beans, bell peppers, carrots, and mushrooms.
Use 1 cup of onion and 3 cups of juicy ripe tomatoes to make the masala or curry sauce.
Add fresh chili to taste.
Prepare ginger garlic paste: 1 tablespoon, which is a 50-50 mix of ginger and garlic.
Gather spices: 2 teaspoons of cumin seeds, 1 teaspoon each of salt, pepper, turmeric, chili powder, coriander powder, and cumin powder.
Melt 2 tablespoons of coconut oil in a pot over above medium heat.
Add 2 teaspoons of cumin seeds and let them cook for a few seconds.
Add 1 cup of chopped onion and the potatoes, cooking for 3 minutes while stirring often.
Add eggplant and fresh chili, cutting vegetables to a similar size.
Cook for another 3 minutes.
Add 3 cups of chopped tomatoes and the spices (salt, pepper, turmeric, coriander, chili powder, cumin powder).
Cook for about 5 minutes, stirring often, to break down the tomatoes and create moisture.
If needed, add water to achieve desired consistency.
Add cauliflower and green beans, cooking for another 3-4 minutes.
Add bell peppers and adjust consistency with water if necessary.
Reduce heat just above a simmer and cook for about 6-7 minutes, checking for tenderness of the potatoes.
Add half a teaspoon of garam masala powder and cilantro to taste before serving.
