Toast cinnamon sticks and star anise until fragrant, then remove and grind them.
Add a generous amount of olive oil to the pot.
Add cardamom to the oil.

Add a whole can of whole peeled tomatoes to the pot.
Add ginger and garlic to the pot.
Add seven green chilies to the pot, adjusting for spice preference.
Add two heaped tablespoons of garam masala and a sprinkle of sea salt to the pot.
Add chicken to the pot, pre-cut and washed, and salt the chicken again.
Let the mixture bubble, then reduce heat and cover for 20-30 minutes.
Check the chicken to ensure it's cooked.
Add the basmati rice to the pot.
Add water as needed, checking the rice's doneness.
Let the palau sit for five minutes before serving.
