2 bay leaves
2 tablespoons red wine (Cabernet Sauvignon) or balsamic vinegar
1 cup unsalted chicken stock or high-quality unsalted beef stock
1 tablespoon regular soy sauce
Optional: 1 tablespoon fish sauce
2 - 4 potatoes (quartered)
3 medium carrots (cut into 1½ inch chunks)
Kosher salt and ground black pepper to taste
2 tablespoons cornstarch mixed with 3 tablespoons cold water

Heat up Instant Pot using 'Sauté More' function until it says 'HOT'.

Pat dry chuck roast and season one side with kosher salt and ground black pepper.

Add olive oil to Instant Pot and coat the bottom.

Place seasoned side of chuck roast in Instant Pot, then season the other side.

Brown chuck roast for 8 minutes per side, then remove and set aside.
