Select one chuck roast from two available, approximately 3.5 lbs.
Preheat Ninja Foodi XL Pro Air Frying Oven to 450 degrees Fahrenheit.
Prepare the roast by drying it off, spraying with avocado oil, and seasoning with salt.
Place the empty enamel coated cast iron dutch oven in the oven to heat up for 30 minutes.
After 30 minutes, place the roast in the dutch oven to sear for about 1.5 minutes on each side until browned.
Remove the roast and let it cool slightly, then add stock to deglaze the bottom of the dutch oven.
Add chopped onions to the bottom of the dutch oven to hold the roast up.
Add the four cloves of garlic whole into the pot.
Add 1 teaspoon of Kitchen Bouquet for flavor.
Layer in some mushrooms, carrots, and celery around the roast.
Season with pepper and add the remaining cooking stock.
Cover the dutch oven with a lid and set the oven to 275 degrees Fahrenheit.
Cook for 2.5 hours, then plan to add potatoes and increase the temperature to 300 degrees Fahrenheit.
