Cut the peppers into 1-inch slices and remove seeds.

Cut the onions into slices.

Cut the chicken cutlets into 1-inch cubes.

Heat a pot on medium heat and add 3 tablespoons of extra virgin olive oil.

Add the sliced peppers to the pot and cook on medium heat, stirring occasionally to prevent burning.

Add the sliced onions on top of the peppers and cover the pot to allow steam to caramelize the vegetables, stirring every 2 to 3 minutes.
