Grease a 9x13 deep baking dish with olive oil.
Heat 1 tablespoon of olive oil in a pan until shiny.
Add sliced leeks and chopped mushrooms to the pan and sauté until softened and juicy.
Transfer the sautéed leeks and mushrooms to a bowl and set aside.
In a separate bowl, whisk together 8 eggs, 2 cups of milk, a pinch of salt, black pepper, and 1/4 teaspoon of fresh nutmeg.
Start assembling the strata by placing a layer of cubed bread in the greased baking dish.
Add a layer of the sautéed leeks and mushrooms on top of the bread.
Sprinkle a layer of Gruyere cheese over the vegetables.
Repeat the layering process with bread, veggies, and cheese until the dish is filled.
Pour the egg and milk mixture over the layers in the baking dish.
Refrigerate the assembled strata for at least 1 hour, or overnight for best results.
Preheat the oven to 325°F (163°C).
Bake the strata uncovered for 1 hour until golden brown on top.
