Cut 10 slices of hearty white sandwich loaf into snowflake shapes using cookie cutters and cube the remaining scraps.
Pre-measure and organize ingredients on a rimmed baking sheet.
Measure out 1/2 stick of unsalted butter and 1 tablespoon of neutral flavored oil.
Thinly slice 14 ounces of tomatoes and place them on paper towels to absorb excess moisture.
Peel and thinly slice 1 onion into rings, separating the rings and adding them to the tray.
Wipe mushrooms clean and slice them thinly and evenly.
Heat 1 tablespoon of oil in a high-walled carbon steel wok over medium-high heat to about 450°F.
Add 1 teaspoon of kosher salt to the mushrooms and cook for 5-7 minutes until they begin to brown.
Prepare the custard by whisking together 3 cups of whole milk, 5 large eggs, 1 teaspoon of kosher salt, 1 teaspoon of oregano, and 1/4 teaspoon of garlic powder until homogenous.
Lubricate a 9 x 13 inch baking dish with the prepared butter.
Layer the cubed bread scraps in a single layer in the baking dish, pressing them down lightly.
Top the bread with half of the mozzarella, half of the sliced tomatoes, all of the onions, the sautéed mushrooms, and the remaining mozzarella slices.
Place the snowflake bread pieces on top and add a slice of tomato on each star.
Pour the custard mixture over the assembled casserole, ensuring all the bread is saturated.
Sprinkle 2 ounces of finely grated Parmesan cheese and 12 thinly sliced olives on top.
Cover the dish with plastic wrap and refrigerate overnight.
The next morning, preheat the oven to 325°F.
Remove the plastic wrap and bake the strata for 1 to 1.5 hours until it springs back lightly when poked and a tester comes out clean.
Let the strata sit for 10 minutes before serving.
