Cut the bread into 1-inch slices, then into strips, and finally into 1-inch cubes.
Let the bread cubes sit out overnight to stale.
Cook sausage in a pan with olive oil over medium-high heat until browned.
Add diced onion to the sausage and season with salt, black pepper, cayenne, rosemary, thyme, and oregano.
Cook until onions are translucent and sausage is browned.
Transfer sausage mixture to a bowl and use the same pan to wilt spinach with a tablespoon of sausage fat, covering it to help it collapse.
Transfer wilted spinach to a strainer, squeeze out excess water, and chop or snip it.
In a bowl, mix 12 eggs with salt, then add milk and mix again.
Grease a casserole dish with olive oil and layer half of the stale bread cubes in it.
Add 60% of the sausage mixture and 60% of the spinach on top of the bread.
Sprinkle half of the shredded fontal cheese over the mixture.
Repeat the layering with the remaining bread, sausage, spinach, and top with the remaining cheese.
Ladle the egg and milk mixture over the top evenly.
Wrap the casserole and refrigerate overnight to let the bread soak up the custard.
Bake in a 350°F oven for about 1 hour and 15 minutes until the top is lightly browned and puffed up.
Let rest for 10-15 minutes before serving.
