1 chopped onion

3oz | 75g | 1/3 cup sugar
2tbsp water
2oz | 50g | 1/2 cup walnuts

Rinse 7oz | 200g | 1 cup red lentils with water and set aside.

Add olive oil to the pan.

Add 1 chopped onion to the pan.

Add 1 grated medium carrot to the pan and mix well; fry over medium heat for about 3 minutes.

Dice 1 celery stick and add to the pan.

Mince 1 garlic clove and add to the pan; cook over medium heat for about 3 minutes.

Add the rinsed lentils to the pan.

Add 7oz | 200g | 1 cup chopped tomatoes to the pan.

Season with 1/2 tsp Italian herbs.

Add 16fl oz | 450ml | 2 cups vegetable stock or water to the pan.

Cook over medium heat with the lid on for about 20 minutes.

In a separate pot, combine 3oz | 75g | 1/3 cup sugar with 2tbsp water and allow sugar to melt and bring to a boil.

Add 2oz | 50g | 1/2 cup walnuts to the pot and caramelise for about 5 minutes.

Let the walnuts cool down on a parchment lined plate.

Add freshly chopped parsley to the lentil pan and mix.

Serve with dairy-free feta and caramelised walnuts.
