Peel and slice 250 grams of fresh ginger.

Rinse the ginger slices before boiling.

Boil water in a pot, then add lemon juice and salt.

Add the sliced ginger to the boiling water and cover.

Let it boil for 30 minutes.

Drain the water from the ginger slices, saving the ginger water for tea.

In a heavy bottom pan, add the boiled ginger slices and 150 grams of caster sugar.

Let the ginger soak in the sugar for 3 to 4 hours (or cook immediately if preferred).

Turn on the flame and cook the ginger in the sugar syrup, stirring continuously.

Once the sugar syrup boils and starts to dry out, scrape the sides of the pan.
