Honey provides a natural sweetness with fewer calories.

Ground ginger is more accessible and has a longer shelf life.
Peel and slice 250 grams of fresh ginger.
Rinse the ginger slices before boiling.
Boil water in a pot, then add lemon juice and salt.
Add the sliced ginger to the boiling water and cover.
Let it boil for 30 minutes.
Drain the water from the ginger slices, saving the ginger water for tea.
In a heavy bottom pan, add the boiled ginger slices and 150 grams of caster sugar.
Let the ginger soak in the sugar for 3 to 4 hours (or cook immediately if preferred).
Turn on the flame and cook the ginger in the sugar syrup, stirring continuously.
Once the sugar syrup boils and starts to dry out, scrape the sides of the pan.
When the sugar has dried out and turned into powder, turn off the flame.
Remove the ginger candy onto a plate and let it cool completely.
Store the cooled ginger candy in an airtight jar.
