Clean and prepare paua by removing the shell and guts.
Chop paua finely and set aside.
Boil potatoes until tender, then drain and mash.
In a bowl, combine mashed potatoes, chopped paua, finely chopped onion, minced garlic, parsley, lemon juice, and egg.
Mix until well combined and season with salt, black pepper, and cayenne pepper.
Form the mixture into small patties.
Coat each patty in flour, then dip in milk, and finally coat with bread crumbs.
Heat oil in a frying pan over medium heat until shimmering.
Fry the patties for 3-4 minutes on each side until golden brown.
Remove from oil and drain on paper towels before serving.
