Cut puff pastry into squares approximately 4.5 inches square.
Mix egg yolk with custard, cinnamon, nuts, and sugar together.
Place a spoonful of custard on each pastry square.
Lay two halves of apricot on each square.
Dab water on each corner of the pastry squares to help seal.
Fold corners of the pastry over the apricot and press to seal.
Place on a baking sheet with space between each pastry.
Sprinkle sugar and chopped nuts over the top of each pastry.
Bake in the oven at 200°C for 15 to 20 minutes.
