Preheat the oven to 325°F.
Place 30 Oreo cookies in a food processor and pulse until finely ground.
Add 1/4 cup melted salted butter to the ground cookies and pulse until well combined.
Transfer the mixture to a prepared pan lined with heavy-duty foil and press evenly into the bottom.
Bake the crust in the preheated oven for about 10 minutes until set.
In a large bowl, combine 24 oz softened cream cheese, 1 cup sugar, 3/4 cup sour cream, 3 large eggs, 1 teaspoon vanilla, and 1/4 teaspoon salt.
Beat the mixture with an electric mixer on high for about 3 minutes until well combined and smooth.
Coarsely crush the remaining Oreo cookies in a resealable bag using a rolling pin or something heavy.
Reserve 1/2 cup of the crushed cookies for topping the cheesecake.
Fold the remaining crushed cookies into the cheesecake batter.
Pour the batter evenly over the pre-baked crust and smooth the top if necessary.
Sprinkle the reserved 1/2 cup of cookie crumbs on top of the batter.
Bake in the same preheated oven for 35 to 45 minutes until the center appears set with a slight jiggle.
Let the cheesecake cool in the pan on a wire rack for about 2 hours until completely cool.
Cover and chill in the refrigerator for at least 1 hour.
Lift the uncut bars out of the pan using the foil and cut into bars for serving.
