Prepare a wet brine using a package of bird baptism brine in a medium sauce pot with water, heat and stir until dissolved, then cool.

Brine the turkey overnight in a food-safe container, covering it completely with the brine solution.

Make the compound butter by mixing 3 sticks of softened butter, 1 tablespoon of minced garlic, 1 tablespoon of olive oil, the juice and zest of 1 lemon, and minced flat leaf parsley until combined.
