Olive oil reduces saturated fat while maintaining moisture.

Chicken thighs are more affordable and can be just as juicy.
Remove the turkey from the wrapper and take out the contents from the cavity, setting them aside for turkey stock if desired.
Rinse the turkey and pat it dry.
Mix melted butter with Cajun style seasoning to create a marinade.
Fill an injector with the marinade and inject it into the breast, legs, thighs, and wings of the turkey, repeating until all parts are injected.
Massage the leftover marinade all over the turkey, front and back.
Spread some vegetables into the bottom of a large roasting pan and lay the turkey on top.
Stuff the cavity with remaining vegetables and herbs, or use stuffing if preferred.
Tuck the wings behind the breast or cover the tips with foil to prevent burning.
Cook the turkey uncovered in a preheated 325°F (163°C) oven.
Baste the turkey every 30 to 45 minutes with pan juices to keep it moist.
Once the skin is crispy, cover the turkey with foil and continue baking until the internal temperature reaches 175°F (79°C) in the thigh and 165°F (74°C) in the breast.
Total cooking time was 6 hours, but adjust based on turkey size.
