Muhammara

Muhammara, originating from Aleppo, Syria, is a vibrant dip made primarily from roasted red peppers and walnuts. Traditionally enjoyed with bread, it reflects the rich culinary heritage of the Levant, where flavors of spice and sweetness intertwine. Today, it has gained popularity beyond the Middle East, often featured in mezze platters worldwide.

walnut’s - 1 cup
bread crumbs - 1/4 th cup
olive oil - 3 tbsp
pomegranate molasses - 1/4 cup
tomato paste - 1 tbsp
cumin powder - 1 tbsp
chili flakes - 1 tbsp
cyannin powder - 1 tsp
lemon - 1
garlic - 1
sugar - 1 tsp
salt

Place 5 red bell peppers in a baking tray.

Put little olive oil and salt.

Place it in an oven at 200°C for 45 min or till it becomes charred on the outer layer.

Remove it to a bowl and close it.

After 5 - 10 min remove skin and seeds.

Chop it to thin strips and put it into a food processor.

Slightly toast walnuts and bread crumbs separately.

Add them to the food processor.

To it add cumin, chili flakes, sugar, salt, pomegranate molasses, olive oil, lemon juice, garlic, and cyannin powder.

Make a coarse paste.

Serve it with pita bread or chips or you can serve it with carrots or any crackers you like.
