  • water
  • sugar
  • lime juice
  • salt
  • mint leaves
  • coconut milk
  • honey

Instructions

  1. 1Peel and core the pineapple, then chop into small pieces.
  2. 2Blend the pineapple pieces with water until smooth.
  3. 3Strain the mixture through a fine sieve to remove pulp, if desired.
  4. 4Add sugar, lime juice, and a pinch of salt to the pineapple juice.
  5. 5Mix until sugar is fully dissolved.
  6. 6Stir in chopped mint leaves for added flavor.
  7. 7Pour the mixture into popsicle molds, filling each about three-quarters full.
  8. 8Insert sticks into the molds and freeze for at least 4-6 hours, or until solid.
  9. 9To release popsicles, run warm water over the outside of the molds for a few seconds.
