Crush a whole package of Keebler pecan shortbread cookies and place in a bowl.
Crush 1 cup of salted pretzels and add to the bowl with the crushed cookies.
Mix in 2 tablespoons of brown sugar.
Melt 7 tablespoons of butter and add to the cookie and pretzel mixture, stirring until combined.
Press the mixture into the bottom of a pie dish and bake at 350°F for 10 to 12 minutes.
Let the crust cool after baking.
In a saucepan, combine 1 and 3/4 cups of sugar, 5 tablespoons of cornstarch, and 1/8 teaspoon of salt; mix to remove lumps.
Add 3 cups of half and half to the sugar mixture, stirring well.
In a separate bowl, mix 6 egg yolks and add them to the half and half mixture.
Heat the mixture over medium heat, stirring continuously until it thickens.
Once thickened, turn off the heat and whisk until smooth.
Add 8 oz of chocolate and 1 tablespoon of vanilla bean paste to the pudding mixture, stirring until the chocolate is melted and the mixture is smooth.
Cover the pudding with saran wrap to prevent a skin from forming and refrigerate to chill.
In the microwave, heat the chocolate for the ganache in 1-minute increments until almost boiling, then stir until smooth.
Pour the chocolate ganache over the cooled crust and spread evenly; refrigerate until set.
In a mixing bowl, combine 8 oz of cream cheese and 1/2 cup of powdered sugar; mix until smooth.
Add 1 and 1/2 cups of whipped cream to the cream cheese mixture, mixing until smooth and combined.
Layer the cream cheese mixture over the chocolate ganache in the pie dish.
Slice and add 5 bananas on top of the cream cheese layer.
Spread the chilled chocolate pudding over the bananas, smoothing it out evenly.
Cover the pie with saran wrap and refrigerate until thoroughly chilled.
