Originating from Turkey, Gavurdagi Salad is a vibrant and refreshing dish often enjoyed in the summer months. It embodies the use of fresh, seasonal ingredients, making it a staple at family gatherings and picnics. Today, variations of this salad can be found in many Mediterranean cuisines, showcasing the universal appeal of fresh vegetables and herbs.
Dice 4 tomatoes and place them in a bowl, including the tomato water.
Thinly dice 1.5 white onions and add to the bowl with the tomatoes.
Add 1 teaspoon of cumin, 0.5 teaspoon of black pepper, and 0.5 teaspoon of red flaked pepper to the bowl.
Add salt to taste, mixing it on top of the onions to help release the onion juices.
Mince 3 cloves of garlic and add to the mixture.
Squeeze the juice of half a lemon into the bowl.
Pour in 2-3 tablespoons of olive oil and 3 tablespoons of pomegranate molasses.
Mix all the ingredients well, ensuring the juice is present in the salad.
Add cracked walnuts and chopped parsley to the salad and mix gently without breaking the tomatoes.
Optionally, add a bit of nutmeg for extra flavor and mix again.
Taste the salad and adjust salt as needed.
Let the salad sit for 10-15 minutes for the flavors to meld before serving.
