Heat a small frying pan over medium-high heat.

Add 2 tablespoons of olive oil and the mint leaves to the pan.

Saute the mint leaves for about 1-2 minutes until they turn a darker color and become crispy, stirring throughout the cooking.

Transfer the fried mint to a small bowl and add the balance of the olive oil.

Place the cannellini beans in the bowl of a food processor.

Add garlic, lemon juice, olive oil, salt, and pepper to the food processor.

Process for about one minute until really smooth.

Transfer the dip to a serving dish.
