Cannellini Bean Dip

1 garlic bulb
extra virgin olive oil

1 can cannellini beans
1/2 lemon
1/2 cup extra virgin olive oil
1/4 cup chives

Cut off the top of one garlic bulb.

Place garlic on foil, drizzle with extra virgin olive oil, and season with salt and pepper.

Wrap the garlic in foil and place it in the oven at 400°F for about an hour.

Drain and rinse some lima beans and set aside.

Chop about a quarter cup of chives into small pieces and set aside.

Once the garlic has cooled, open it up and mash the roasted garlic cloves.

In a food processor, add the cannellini beans and the mashed garlic.

Season with salt and freshly cracked pepper, and add the chopped chives (saving some for garnish).

Squeeze the juice out of half a lemon and add about 1/2 cup of extra virgin olive oil.

Pulse to your desired thickness, adjusting with more olive oil or water as needed.

Taste and adjust seasonings as necessary.

Plate the dip for presentation, drizzle with extra virgin olive oil, and garnish with remaining chives.
