Wash the cayenne, red serrano, red sashito, and bell peppers thoroughly.

Remove the stems from the peppers and wear gloves while handling them to avoid burns.

Chop the onion roughly and add it to a heavy-duty saucepan with the peppers.

Add 2 cups of white distilled vinegar to the saucepan with the peppers and onion.

Put the lid on the saucepan and boil the mixture on medium to medium-low heat for 20 minutes until the peppers and onions are soft.

After boiling, transfer the mixture to a blender and add 1/4 cup of sugar, 2 teaspoons of pink Himalayan salt, the juice of half a lemon, and 1 teaspoon of oil.

Blend the mixture for about 10 minutes until smooth.

Strain the blended sauce through a fine mesh strainer to remove fibrous bits.

Pour the strained sauce back into the Vitamix for easier pouring into jars.

Fill half pint and 4 oz jars with the hot sauce, leaving a 1/4 inch headspace at the top.

Seal the jars with new canning lids and place them in a canner with water.

Bring the canner to a rolling boil and let it boil for 20 minutes.

After boiling, turn off the canner and let it sit for 5 minutes before removing the jars.
