Pat dry the cod with paper towels and season both sides with salt and freshly cracked black pepper.
Set a large non-stick skillet over medium-high heat and add olive oil until shimmering.
Add the cod in a single layer, starting with the top side down, and sauté undisturbed for 3-4 minutes until golden brown.
Flip the cod and reduce the heat to medium, cooking for another 2-4 minutes until seared on the second side and reaches an internal temperature of 145°F.
Transfer the cod to a separate plate.
In the same skillet, add cherry tomatoes, white wine, butter, and minced garlic, stirring over medium-high heat for 3-4 minutes, scraping up browned bits from the bottom.
When the sauce is reduced and the tomatoes soften, return the cod to the pan, turn off the heat, and garnish with 2 tablespoons of parsley or fresh basil.
