Spinach Çılbır is a traditional Turkish dish that combines poached eggs with sautéed spinach and yogurt, often enjoyed for breakfast or brunch. The dish reflects the Turkish love for fresh ingredients and simple yet flavorful preparations. Today, variations can be found across the Middle East, showcasing the versatility of this comforting meal.
Chop about 1 kilo of spinach and wash it thoroughly, then place it in a colander.
Add about 2-3 tablespoons of oil and 1 tablespoon of butter to a pot and melt the butter.
Add 1 large finely chopped onion to the pot and sauté for a few minutes until it turns slightly pink.
Add about 1 teaspoon of red pepper paste and sauté for 1-2 minutes.
Add 1-2 cloves of finely minced garlic and stir for a few seconds.
Add the washed spinach to the pot and close the lid.
After a few minutes, open the lid and stir the spinach, which should have started to shrink.
Add enough salt and black pepper, stir, and close the lid again.
Cook on medium-low heat for about 20-25 minutes.
After 25 minutes, check if the spinach has absorbed its water; if not, leave the lid off and cook for a few more minutes until the water evaporates.
Set the cooked spinach aside.
In a separate pot, add about 4-5 cups of water and bring it to a boil.
Add 2 tablespoons of vinegar and about 1 teaspoon of salt to the boiling water and stir.
Place one egg into a ladle and drop it into the boiling water, then add 2 eggs total.
Cook the eggs in the water for about 7-8 minutes.
Remove the eggs with a slotted spoon and place them in cold water.
On a plate, place the cooked spinach and drizzle garlic yogurt over it (you can mix strained yogurt and regular yogurt).
Place the poached egg on top of the spinach.
Melt about 1 teaspoon of butter, add red pepper flakes to it, and drizzle it over the top of the dish.
