Tasty Fruit Loaf Loaded With Raisins, Cranberries And Apricots

Mix lukewarm milk, dried active yeast, and sugar in a bowl and leave it for 5 minutes.
Add the beaten egg (reserve 1 tbsp for later) and combine well.
Gradually add the plain flour and salt, mixing until combined.
Add the butter and combine until completely absorbed.
Cover the dough and let it rest for 15 minutes.
After 15 minutes, smooth the dough by stretching and folding it.
Cover and leave it to prove until double in size (at least 1 - 1 1/2 hours).
Once risen, squeeze the air out of the dough and tip it onto a floured surface.
Roll out the dough into a rectangle.
Add the raisins, dried cranberries, and chopped dried apricot, pressing the fruits gently into the dough.
Make cuts into the remaining part of the dough and roll it to form a loaf.
Place the dough in a loaf pan and cover it.
Leave it to prove until double in size (at least 1 hour).
After 1 hour, brush with the reserved egg and bake in a preheated oven at 180C/350F for 35-40 minutes.
Brush with leftover butter while hot.
