1 tbsp leftover egg
1 tbsp leftover butter

Add the beaten egg (reserve 1 tbsp for later) and combine well.

Cover and leave it to prove until double in size (at least 1 - 1 1/2 hours).

Once risen, squeeze the air out of the dough and tip it onto a floured surface.

Roll out the dough into a rectangle.

Add the raisins, dried cranberries, and chopped dried apricot, pressing the fruits gently into the dough.

Make cuts into the remaining part of the dough and roll it to form a loaf.

Place the dough in a loaf pan and cover it.

After 1 hour, brush with the reserved egg and bake in a preheated oven at 180C/350F for 35-40 minutes.
