Everything Bagels with Herb & Garlic Cream Cheese

Greek yogurt reduces calories while maintaining creaminess
Start by making the herb and garlic cream cheese using firm tofu that has been squeezed to remove excess water.
Add the tofu to a blender along with lemon juice, apple cider vinegar, sea salt, onion powder, garlic powder, white pepper, garlic cloves, and melted coconut oil.
Blend until smooth, using a wand if necessary to help mix it well.
Fold in fresh herbs: dill, basil, thyme, and chives.
Cover the mixture and refrigerate for at least 4 hours to allow flavors to develop.
For the bagel dough, combine 4 cups of bread flour, 1 tablespoon of sugar, and 1 teaspoon of sea salt in a mixing bowl.
Add 2 and 1/4 teaspoons of quick rise yeast to the dry ingredients.
Slowly add 1 and 1/2 cups of water heated between 120 and 130°F and 1 tablespoon of melted coconut oil to the mixture.
Mix until a sticky smooth ball forms, then handle the dough with a little flour to remove it from the hook.
Lightly flour a surface and place the dough on it, kneading it a couple of times if necessary.
Cut the dough into 8 equal pieces for bagels.
Shape each piece into a smooth ball, making a hole in the center with your thumb and stretching it to form a bagel shape.
Place the shaped bagels on a baking sheet lined with parchment paper.
Cover the bagels with a damp tea towel and let them rise in a warm place until they are about 50% bigger, approximately 10-15 minutes.
Preheat the oven to 425°F.
Prepare the everything bagel topping by mixing together poppy seeds, white sesame seeds, sunflower seeds, granulated onion, granulated garlic, and a little sea salt.
Make a vegan egg wash by mixing 1 tablespoon of brown sugar with 2 tablespoons of nut milk.
Boil 2 quarts of water with 1 teaspoon of brown sugar and 1 teaspoon of baking soda.
Once the bagels have proofed, boil them in the water for about 1 minute, flipping them halfway through.
Remove the bagels from the water and brush them with the vegan egg wash.
Sprinkle the everything bagel topping over each bagel before placing them in the oven.
Bake the bagels for about 20-25 minutes until golden brown.
