Add 9 g of instant yeast, 1/2 cup of warm water, and bone broth to a stand mixer.
Mix on low until combined, then continue mixing until smooth for about 2 minutes.
Transfer the smooth dough to a greased bowl with a little olive oil.
Cover the bowl with plastic wrap and let it rise for 1 to 2 hours until doubled in size.
Line a baking sheet with parchment paper and drizzle with olive oil.
Lightly flour a work surface and turn out the dough, coating it with enough flour to work with.
Divide the dough into eight equal portions and round each one into a smooth ball by tucking it under itself.
Place the dough balls on the prepared baking sheet and cover with a kitchen towel to rest for 30 minutes to 1 hour until springy to the touch.
Fill a large stock pot with water and bring it to a boil, adding cane sugar and salt.
Preheat the oven to 375°F.
Create holes in each bagel, making them larger than desired as they will expand during boiling and baking.
Once the water is boiling, drop in the bagels, about four at a time, and boil for 25 to 30 seconds on each side.
Remove the boiled bagels and place them back on the baking sheet.
Sprinkle the hot bagels with everything bagel mix immediately after boiling.
Bake the bagels at 375°F for 25 to 30 minutes or until golden brown.
