In a mixing bowl, combine 250 grams of bread flour, 7 grams of fast action yeast, and 5 grams of fine sea salt, keeping the yeast and salt separated initially.
Add 30 grams of white sugar to the mixture.
Pour in 100 ml of warm water and 1 tablespoon of olive oil.
Using a dough hook, mix the ingredients on medium speed for about 5-7 minutes until the dough is smooth.
Check the dough using the windowpane method; it should stretch without breaking.
Divide the dough into 6 equal pieces, weighing about 75 grams each.
Shape each piece into a ball by bringing the edges to the center and swirling it in your palm.
Rest the shaped dough balls on a baking sheet, greased with olive oil, and cover loosely with plastic wrap.
Let the dough rise for about 45 minutes, checking for a 50-75% increase in size.
After 45 minutes, shape the dough into bagels by pressing through the center and stretching the dough.
Cover the shaped bagels loosely with plastic wrap and let them rest for another 20 minutes.
Prepare a large pot of boiling water, reduce the heat slightly, and add 1 tablespoon of baking soda.
Boil the bagels one at a time for 1 minute on each side, using a slotted spoon to lift them out.
Place the boiled bagels on a baking tray lined with parchment paper.
Brush the bagels with an egg wash and sprinkle with everything bagel seasoning.
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Bake the bagels for 15-20 minutes until golden brown.
Let the bagels cool slightly before serving.
