1

Start by marinating 500 grams of boneless chicken thighs with 1/2 teaspoon salt, 1 teaspoon chaat masala, 1 teaspoon crushed black pepper, 1 teaspoon white pepper, 1 teaspoon garam masala, 2 teaspoons lemon juice, and 1/4 cup yogurt. Mix well and let it marinate for at least 30 minutes.

2

Prepare the dough for pita bread by mixing 2 cups of all-purpose flour with 1/2 teaspoon salt, 1 teaspoon sugar, 1/4 teaspoon baking soda, and 1 tablespoon oil. Add 2-3 tablespoons of yogurt and mix. Gradually add about 150 ml of water to form a dough. Let it rest for 30 minutes.

3

For the dip, mix 1 tablespoon butter (optional), 1/4 cup fresh cream, and 1/4 cup mayonnaise. Optionally, add 1/2 teaspoon grated garlic for flavor.

4

After marinating, heat 2 tablespoons of oil in a pan and add the marinated chicken. Fry for 1.5 to 2 minutes, then cover and cook on low flame for about 20 minutes, turning occasionally.

5

Once the chicken is cooked, increase the flame to high to dry any excess water. Optionally, smoke the chicken with coal for added flavor.

6

Chop the cooked chicken into small pieces and mix in 2-3 tablespoons of fresh cream and some chopped fresh coriander leaves for the filling.

7

Prepare the pita bread by rolling the rested dough into small, thin rounds. Cook on a preheated skillet for about 10-20 seconds on each side until cooked and dotted.

8

Assemble the shawarma by spreading the dip on the pita, adding the chicken filling, and rolling it up. Cut in half and serve.
