Fermented Apple Soda Recipe

Get a mixture of eating apples and crab apples and put them in a jar.

Cover the apples with water.

Weigh the combined weight of the apples and water.

Add 10% of the combined weight in unrefined caster sugar (or honey or maple syrup).

Add a stick of cinnamon or cassia bark to the jar.

Shake the jar to mix the ingredients.

Leave the jar at room temperature for 3 to 4 days to ferment.

Once a day, let the gas out and give it a good shake to mix the flavors.

On the fifth day, strain the mixture into a bottle.

Leave the bottle at room temperature for another day to carbonate.

After carbonation, pop the bottle in the fridge to cool down, letting gas out beforehand.
