3 medium beets, peeled and grated

2 bay leaves
1 teaspoon whole peppercorns
3 tablespoons tomato paste
1 tablespoon maple syrup
2 tablespoons white vinegar
3 cloves garlic, minced
1/4 cup fresh dill, chopped
1/2 cup sour cream

Rinse and remove outer leaves from the cabbage, then cut it in half and shred it.
