Peel and core the pears, cutting them into thumbnail-sized pieces.
Cut the apples into quarters, remove the core, and chop into small pieces.
Add diced apples to a pan with about 100g of sugar and an equal volume of water to make a syrup.
Once the pears are prepared, add them to the same pan.
Add a cinnamon stick and star anise to the pan for flavor.
Cut the plums around the stone and quarter them, then add to the pan.
Zest the clementines and segment them, adding both zest and segments to the pan.
Add blackberries to the pan and mash a few against the side to release their juice.
Drain the mixture, saving the juice in a bowl.
Cut slices of panettone to line a loaf tin, soaking each slice in the syrup before placing it red side down in the tin.
Fill the lined tin with the fruit mixture, removing the cinnamon stick and star anise first.
Top with more soaked panettone slices, red side up, and pack it down firmly.
Cover with cling film and place a flat plate with a heavy weight on top to compress it as it cools overnight.
After cooling, remove the cling film and turn the pudding out onto a plate, garnishing with a sprig of mint.
