Frozen cranberries are often more affordable and available year-round.
Wash the fresh cranberries under cold water and drain them in a colander.
In a large pan, add the cranberries and 1 and 1/3 cups of granulated white sugar on top.
Turn the heat to medium and add the juice from the canned Mandarin oranges.
Stir the mixture to combine the sugar with the cranberries and juice.
Watch for the cranberries to begin popping open as they cook, indicating they are releasing pectin to thicken the sauce.
Stir occasionally to prevent burning and ensure even cooking.
If the mixture appears too thick, add more liquid such as apple juice, pineapple juice, or more juice from the canned Mandarin oranges.
Once the cranberries have split open, skim off any white frothy stuff that develops on the surface and set it aside in a bowl if desired.
Continue cooking until the sauce thickens, then add the Mandarin oranges for flavor.
Remove from heat and let the sauce cool before transferring it to a desired dish for refrigeration.
