50 ml of cold water
130 ml of whole milk
165 ml of whipping cream
30-40 g of sugar
1 tsp of matcha powder

Soak the gelatine in cold water, mix well and leave for 10-15 minutes.

Sift the matcha into a thick-bottomed pot, add the sugar, whole milk and whipping cream. Place on a heat above medium and mix well. Heat the liquid well, but do not boil. As soon as bubbles appear turn off the heat.

Add the soaked gelatin and mix until dissolved.

Pour the liquid into molds through a sieve. Use a spoon to remove bubbles from the surface, if any. Place in the refrigerator until set, about 2 hours.

After the matcha panna cotta has set, it is ready to eat. You can eat it straight from the mold or take it out.

To take the dessert out of the mold: boil water in a pot larger in diameter than the mold. Reduce heat. Dip the dessert mold into the water for 3-5 seconds. Also dip the edges.

Run a thin knife around the sides of the mold. Cover the mold with a serving plate and invert it. Shake well and lift the mold.

Serve sprinkled through a sieve with a little matcha and fresh berries.
